Recipes, sun, and sampling...
So it was a somewhat crazy time with getting the recipe right and after much deliberation, (and much patience) and indeed many many bottles of gin later, we agreed that we wanted to stick with our original plan of a pear and basil finish on the palate. But sampling gin in the heat of the Gascony sun on the terrace by the pool, surrounded by roses, and blue skies, was an easy task, and one that we relished.
Back to our original recipe (having gone off the rails for a while) we were now in full steam to polish it and make it perfect.... Clean, sophisticated, simple, and utterly moorish...
